1. WHIP THE EGGS FLUFFY
Start by preheating the oven to 175°C and lining your cake tin with baking paper. Melt the butter, stir in the milk, and let it cool. Use eggs that are at room temperature; warm eggs whip better than cold eggs. Beat the eggs and sugar on high speed using your mixer or assistant until they become light, white, and fluffy. This should take about 5 minutes.
2. SIFT IN DRY INGREDIENTS
Sift bag B into the egg batter to prevent lumps and carefully stir until you have a smooth, lump-free batter. It's important to maintain the air bubbles you've whipped in to achieve a nice, fluffy cake. Gradually add the butter-milk mixture and gently stir, just enough to form a smooth batter. Pour the batter into the prepared tin and bake it in the middle of the oven for approximately 20 minutes.
3. CHECK IF THE CAKE IS READY
To check if the cake is ready, insert a skewer into the middle; it should come out dry. Once the cake is done, remove it from the oven and let it cool for 10 minutes. Then, create 20 holes in the cake using the skewer.
4. SPREAD THE GLAZE EVENLY
While the cake is cooling, prepare the glaze. Begin by melting the butter and then adding the remaining ingredients. Mix until the mixture is free of lumps. Pour the glaze over the cooled cake and use a spatula to evenly spread it.
5. SPRINKLE COCONUT
Finally, generously sprinkle coconut over the cake. Allow the cake to properly cool and set by placing it in the refrigerator for at least 2 hours to allow the glaze to harden.
6. CUT INTO PIECES
Once the cake is properly set, cut it into pieces and store them in an airtight container in the fridge or freezer. Enjoy!
