RÅGKUSAR BREAD ROLLS

Rågkusar are wholesome rye rolls baked with sourdough, known for their deep flavour and satisfying chewey texture. Popular in both Finland and Sweden, these hearty little bread rolls are a staple at the Nordic breakfast table. You eat them as halves as open face sandwiches. Nutritious, rustic, and full of deep flavour character, they bring the taste of traditional Nordic baking straight to your kitchen.

1. MIX THE PRE-DOUGH

Day 1: Mix bag e with 250ml of room temp water, and let it stand for an hour. Stir it to make sure the dehydrated sourdough starter is completely mixed in and add bag g. Mix until there is no lumps remaining.

 

Cover the bowl with plastic wrap and let it rest at room temperature (about 24°C) for 24 hours.

2.MIX THE MAIN DOUGH

Day 2: Pour 500ml room temp water into a large bowl and add bag a and the sourdough mix from Day 1. Stir until fully mixed and no lumps remain. Add bag i and 30ml of soy sauce and knead it for 5min. Cover the bowl with a plate or a tea towel and let the dough rest and rise for 90min.

 

Tip: This dough will be sticky so if not using a mixer, either use a danish dough whisk or keep a bowl of water next to the bowl to dip your fingers in to prevent dough from sticking to them while kneading.

3. MAKE THE BREAD CAKES

Preheat the oven to 240 °C (or 225 °C fan-forced). Flour your bench with rye flour from bag f and pour out the dough on it and divide it in 2 pieces. Roll each piece into a log and cut each into ten pieces. Knead each piece into a ball. When all pieces are done, take the first one and flatten with your hand to about 1 cm thickness. Place on a baking tray with a baking paper and prick with a fork. Make sure to give each bread roll plenty of space. Cover with a tea towel and let it rest for 30min while the oven is preheating. Bake for 14min or until light brown at the edges. Let cool on a wire rack under a tea towel.

7. CUT YOUR BREAD

To cut this bread start cutting around the edges and then and pull the middle part apart. Voila you have made rågkusar! Store in plastic bags.
