VÖRT BREAD ROLLS
Here’s a take on the traditional Swedish Christmas bread, Vörtbröd—a beloved holiday classic. This flavourful bread is a staple on the Julbord, the Swedish Christmas buffet.
These cute rustic breakfast rolls that proof overnight and bake fresh in the morning are as easy to make as they are delicious! Perfect for a Christmas morning ham sandwich or topped with cream cheese, these rolls will fill your kitchen with the warm, spiced scent of a Nordic Christmas and add freshly baked flavour to your holiday brekkie.
1. SOAK SULTANAS
In a small bowl, add the sultanas and fill with water. Let the sultanas soak for about 1 hour, then drain the water.
2. MIX THE DOUGH
In a large bowl or mixer, dissolve the yeast in the water then add the beer and oil. Add the flour and spices, molasses, and the sultanas, then mix everything into a smooth dough.
There’s no need to knead this dough; simply mix until it’s smooth. The dough will be quite loose and sticky. If you’re not using a mixer, keep a bowl of water nearby to dip your mixing utensil in (danish dough whisk, spoon, or dough scraper) to prevent the dough from sticking to it.
3. MAKE RUSTIC ROLLS
Cover two oven trays with parchment paper. Use a spoon or dough scraper to portion out 15 rustic-looking dough lumps onto the trays.
Sprinkle the dough generously with flour, ensuring all the dough is well-covered.
4. PROOF THE DOUGH
Then, cover the trays with plastic wrap and place them in the fridge and let the rolls proof overnight, or for at least 8-10 hours.
Option for same day bread: leave them to proof in room temperature for 2-3 hours on your kitchen bench.
5. BAKE THE BREAD
Preheat the oven to 225°C (for a conventional oven) or 205°C (for a fan-forced oven). Remove the rolls from the fridge and uncover them. Allow the rolls to proof at room temperature for about 30 minutes while the oven is pre-heating.
Just freeze the bread as soon as it has cooled, then take a piece out and heat it in the microwave as needed. This way, it will taste freshly baked every time. Bake in the middle of the oven for about 20-25 minutes, or until the rolls have a nice deep colour.
